Healthy Oat Pancakes

These delicious healthy pancakes are whipped together using oats, chia seeds, egg and ricotta. It does not include any cane sugars or traditional butter, making it a healthy breakfast alternative when you are craving something sweet in the morning. 

INGREDIENTS

1 cup Organic Rolled Oats
1 tbsp Organic Cinnamon Powder
1 tbsp Organic Black Chia Seeds
½ cup ricotta
1 egg
1 tsp vanilla extract
1 tbsp Organic Coconut Butter or Organic Australian Ghee
Organic Coconut Flower Nectar - for topping
Topping of choice – banana, blueberries, goji berries, walnuts, nut butter 

METHOD

  1. Mix oats, cinnamon, chia seeds, ricotta and egg into a bowl.
  2. Heat up coconut butter or ghee in a pan.
  3. Scoop 2 tbsp of mixture Into pan and cook for 1-2 minutes on each side.
  4. Top with coconut flower nectar and toppings of choice.
